HOW TO STORE YOUR STARTER CULTURE

• Store the starter culture in the refrigerator until you’re ready to activate it
• Use the starter culture by the date on the bag

SUPPLIES YOU'LL NEED

Ingredients
• 1 packet of sour cream starter culture
• Fresh pasteurized cream or half-and-half (not UHT/ultra-pasteurized)

Equipment
• Glass jar that can hold up to 4 quarts
• Stainless steel pot that can hold up to 4 quarts with lid (avoid aluminum)
• Thermometer
• Coffee filter or butter muslin
• Rubber band
• Stainless steel, silicone, or wood spoon or spatula
